Ingredients

4 ounces Happyist Truffle Cheese, cubed

1 cup non-dairy milk (soy, almond, coconut, etc)

1 tablespoon vegan butter

⅓ cup panko bread crumbs

2 cups dry small shaped pasta

optional garnish: fresh thyme and truffle oil
Directions
Add Happyist Truffle Cheese and non-dairy milk to a small blender and blend until smooth and creamy. Set aside.
Melt butter in a small skillet over medium-low heat. Add panko bread crumbs and toss to coat. Sauté bread crumbs until golden and toasted. Transfer to a bowl and set aside.
Cook pasta according to package directions. Drain and return to pan.
Add truffle cheese/cream sauce to the cooked pasta and toss until pasta is fully coated. Season with salt and pepper to taste.
Transfer mac & cheese to serving dish. Top with toasted bread crumbs, fresh thyme, and a drizzle of truffle oil.
